Confetti Coleslaw
Yield: 10 cups
Time: 35 minutes
So smooth, creamy and light. This is the ultimate comfort side!
INGREDIENTS:
½ Green cabbage, thinly sliced
½ Red cabbage, thinly sliced
1½ Cups Carrots, shredded
1Cup Onion, shred with juice
2 Cups Mayo
½ Cup Sour cream
2T Agave (or sugar)
½ Cup Apple cider vinegar
1T Dry Mustard
1½ T Poppy seeds
Salt and pepper to taste
METHOD:

Place first 4 ingredients in a large bowl or big pot

Grind salt and pepper and toss.

Whisk remaining ingredients and toss with ¾ of the dressing (add remaining, if needed).
TIP:

You need a large vessel to toss and make this recipe. After an hour, the dressing will wilt the cabbage down reducing your yield to about 10 cups.

The agave with mix much easier into the dressing or, if using the sugar, blend sugar and vinegar first to dissolve

Add remaining dressing ingredients for a crunchless, smooth dressing.
