Best Ever Lemon Cookies

Time: 10 minutes
These lemony cookies are just like grandma made.
INGREDIENTS:
2 ¼ Cups All-purpose flour
1¼ tsp Baking powder
¾ tsp Kosher salt
10 T Butter, softened
1 Cup Cream cheese
1¼ Cup Sugar, granulated
2 Eggs
1T Lemon zest
¼ Cup Fresh lemon juice
2 tsp Vanilla extract
10 Drops Yellow food color
¾ Cup Powdered sugar
METHOD:

Whisk first 3 dry ingredients in a medium bowl.

In a large bowl beat softened butter and cream cheese with sugar until light and fluffy, about 2 minutes.

Beat in eggs, lemon zest, juice, vanilla and coloring. Then lightly beat in dry ingredients until just combined. Cover bowl with plastic wrap and refrigerate about 2 hours or overnight, till firm.

Line a baking sheet with parchment paper, preheat oven to 325° and scoop batter into 2-inch rounds. place 2-inches apart on pan.

Place powdered sugar on a plate and roll every ball returning it to its place. Let sit for 2 minutes then re-roll (do not shake off excess).

Bake 18-20 minutes until cookies crackle and are slightly soft in the center.

Let cool on rack.
